Chemists, Ramen, Shibas

Ramen Chemistry follows along as two former chemists create a ramen restaurant concept in the East San Francisco Bay.  It is an inside view as the Shiba Ramen project unfolds, from unexpected conception to functioning business.  Its goal is to explore everything that goes into building the enterprise, from food and design to business and law to the protein chemistry of the human umami response.  

Jake Freed is a lawyer and retired chemist.  He lives with his wife and  collaborator (and retired chemist) Hiroko, two shiba inus, and one toddler in Oakland, CA.
